Orleans Method Sparkling Wine Vinegar - the Orleans Method, perfected over 500 years ago in France. Authentic barrel-aged vinegar, converted slowly over many months from quality wines and fermented juices with the starter - the 'mother' - in oak barrels. Contrast to the modern method that takes just hours but removes nutrients and flavors, the vinegars produced in the traditional method are complex, rich elixirs with fine balance and subtle complexity.
Late Harvest Sauvignon Blanc Vinegar - Late harvest grapes (as are used to produce the great Sauternes in France) this "agrodolce" (sour and sweet) vinegar is almost sherry-like in color and complexity with hints of vanilla from the wood, sweet apricot, fig and pear from the late-harvest grapes…all with a strict backbone of crisp acidity from the vinegar base.
Gravenstein Apple Cider Vinegar - Slow Food has declared the Gravenstein apple to be a "Heritage" food that should be protected from further encroachment. The fruit has long been sought after by chefs for its elegant balance of sweet and tart flavors and its crisp flesh. This one is so tasty I could drink it by the spoonful.

One of my favorite mignonettes:
- 1 tsp finely minced shallots
- 1 TBSP Katz Sparkling Wine vinegar
- 1 TBSP Meyer Lemon juice
- 1/8 tsp yuzu kosho (or sub finely minced Thai Bird chile and lemon zest)
